Kitakata Ramen Ban Nai in Costa Mesa is an excellent choice if you’re craving chashu ramen with a clear broth. It’s paired with wavy noodles and generously topped with chashu slices and an egg. While there’s a sister location in Buena Park offering the same menu items, many local ramen hunters believe that the Costa Mesa branch consistently serves superior ramen.

The Costa Mesa location always has a line forming by the time they open and parking is limited. If you’re looking to avoid parking hassles, consider taking an Uber or taxi. It’s recommended that if you do drive, arrive early, before they open, to secure a spot at the front of the line.

This is a new summer special that is currently available in their Costa Mesa and Torrance locations. Get over there and try this bowl out for yourself. Tell them ramen Zac sent ya!

It’s a tonktosu shoyu soup, topped with bean sprouts, cabbage, garlic, and fat. Paired with thick noodles. You have the option to customize this bowl. I went with normal taste, double garlic, and normal vegetable toppings.

This style of ramen is known for its mile high pile of bean sprouts and had I selected double vegetables, mine would have been a mile tall.

Super thick noodles.

The fried chicken makes this Mazesoba really special.

This is also a pretty healthy portion of noodles. They are chewy.

Spicy dipping broth.

Make sure you squeeze a little lemon on your noodles. The broth has some heat, but isn’t overwhelming.

Rich Chuka Soba from Mendoki

You can choose between light or rich broth for the chuka soba. The rich broth has a strong fish flavor to it. If you are new to ramen, your taste buds may not have acquired a taste for the fish flavor. If this is the case, we would recommend the light broth option.

It’s served with thick and chewy noodles. Topped with healthy portions of pork chashu, green onions, bamboo, and seaweed.

Mendoki Menu

Also available at Mendoki are these other styles of ramen that may be of interest to you.

Jiro style ramen for a gut busting bowl of ramen stacked high with beansprouts, pork back fat, garlic, and thick cuts of pork chashu.
Tsukemen for dipping style ramen that is perfect for a hot day or if you are in the mode for 453g of noodles.

If you are looking for noodle options that have a rich fish flavor, the following may be options for you.

Chashu Tsukemen from the iconic Tsujita brand. Tsujita dominates the local LA ramen scene with several different shops. Each shop focusing on different styles of noodles.
Josui Ramen serves up their signature ramen that is finished with a little fish stock.
Jousi Kosoba Ramen is their signature ramen that is amplified a bit more with garlic oil.

Tsukemen from Mendoki.

Thin yet flavorful dipping sauce. It’s got hints of fish flavor. This style is an acquired taste, but I’m starting to really love it now.

Up close on the 450g of noodles

The large noodle serving of the Tsukemen from Mendoki is 250g before cooking. After cooking, it works out to about 450g. The noodles were chewy and medium in length. I recommend squeezing the lemon on the noodles prior to dipping.

The broth was thin and had a hint of bitterness from the fish flavors that are present.

The head chef was trained at the legendary chain Taishoken in Japan. Taishoken is known for their tsukemen. Given this background, you’ll be enjoying some of the best available dipping noodles in California.
