You can choose between light or rich broth for the chuka soba. The rich broth has a strong fish flavor to it. If you are new to ramen, your taste buds may not have acquired a taste for the fish flavor. If this is the case, we would recommend the light broth option.

The large noodle serving of the Tsukemen from Mendoki is 250g before cooking. After cooking, it works out to about 450g. The noodles were chewy and medium in length. I recommend squeezing the lemon on the noodles prior to dipping.

The broth was thin and had a hint of bitterness from the fish flavors that are present.

The head chef was trained at the legendary chain Taishoken in Japan. Taishoken is known for their tsukemen. Given this background, you’ll be enjoying some of the best available dipping noodles in California.
