Vegan Tantanmen @ Mensho SF

Vegetable soup with konbu and shitake, seven types of nuts, sesame, cilantro, chili oil, green onions, chives, szechuan peppercorns, pickled ginger, and soy meat. This was rich and creamy with the typical sesame flavor that I know and love in tantan style noodles. The use of enoki for the chashu was really well done. The peppercorns give this bowl a bit of heat.

Hearty fresh noodles served with this bowl.

Impossible Vegan Mazemen @ Iki Ramen

Impossible Vegan Mazemen. Vegan noodle, house spicy sesame miso, impossible meat, organic tofu, crispy onion, sesame seed, and scallions.

You can see the impossible meat up close. It looks like meat and is pretty close to tasting like meat too. I prefer real meat though.

The use of the impossible meat makes this dish much lighter than what you may be used to with other broth less ramen options in the area. Perfect for those looking for something light.

Vegan Creamy Mushroom Ramen From Kenchan Ramen

Clean looking packaging.

Simple kit. Broth concentrate, noodles, and mushrooms.

This has two types of noodles. Green is spinach and red is tomato. Includes maitake, shimeji, and white mushrooms sautéed in red chili pepper and garlic infused olive oil, edamame (not pictured).

I recommend cooking the noodles for just under 2 minutes. This gives you a little more time to put the final bowl together. Remember, noodles will still cook in the broth so under cooking them will buy you some time to get a great photo before you crush it.

These mushrooms worked really well with the broth. Reminds me of a creamy mushroom soup with tomato noodles.
