The spice level is just right, providing a kick without overwhelming your palate. The tonkotsu broth is rich and hearty, providing a perfect complement to the miso. It’s topped with wood ear mushrooms, bean sprouts, cabbage, and a soft-boiled egg, and is served with thick noodles.
