Tori Paitan from 831 Tokyo Ramen was absolutely fantastic. The satisfying broth and the perfectly textured noodles made for a delightful slurping experience. It appears that Tori Paitan will be a permanent menu item at 831 Tokyo Ramen going forward. If you’re a fan of Laki Ramen or Kashiwa, Tori Paitan deserves a spot on your must-try list. I would brave traffic for Tori Paitan any day. At 831 Tokyo Ramen, there’s also a version of Tori Paitan available with less chashu and no chicken meatballs.

Moreover, the restaurant itself has a fantastic ambiance—open and airy, allowing you to relish the blessing of California’s outdoor weather. Making your way here is an absolute must.

Since this shop is near the Petersen Automotive Museum, you can conveniently visit it before or after your exploration of the museum’s collection of cool cars. Making your way here is an absolute must.

They simmer whole chickens for over 20 hours then age the broth at low temperature for at least 24 hours in order to extract the perfect canary color of the broth. You’ll find the Tori Paitan here a little lighter than Kashiwa. But, this bowl is rich because of their use of the shoyu tare.

Old-School Medium-bodied tamari soy based whole chicken, kombu seaweed & mushroom broth paired with thin yellow wavy noodles. A thick cut of pork was added.

It once had two locations, the first situated on Sawtelle Blvd, now occupied by Menya Tigre, and the second nestled in downtown Culver City. This post harks back to my early ramen hunting days, and I find myself struggling to vividly recollect and describe its essence, evoking a tinge of sadness.
