They simmer whole chickens for over 20 hours then age the broth at low temperature for at least 24 hours in order to extract the perfect canary color of the broth. You’ll find the Tori Paitan here a little lighter than Kashiwa. But, this bowl is rich because of their use of the shoyu tare.

Old-School Medium-bodied tamari soy based whole chicken, kombu seaweed & mushroom broth paired with thin yellow wavy noodles. A thick cut of pork was added.
