Spicy Tan Tan Tsukemen at Tonchin LA is a must-try. This dish features chilled, homemade noodles bathed in a warm Tokyo Tonkotsu pork broth and adorned with roasted chashu pork, ground pork, a perfectly cooked egg, fresh scallions, menma (bamboo shoots), crunchy cashew nuts, chili peppers, and vibrant radish sprouts. While it may look intimidatingly spicy, it delivers a balanced heat that’s far from overwhelming. The standout is the broth – it carries a delightful sesame flavor, reminiscent of peanut butter, that harmonizes beautifully with the spice. What’s more, the noodles are freshly made in-house, in the room right up front. You can taste the care and craft in every bite. I highly recommend visiting Tonchin LA for this fantastic dish.

Marumen in Fairfax, Virginia, is serving up some pretty solid tsukemen. Pictured below is their Godzilla Tsukemen, which comes with spicy miso dipping broth, thick flat noodles, egg, chashu, and nitamago.

Ramen shack standard menu options

This is the tsukemen (dipping noodles) version on the Duck Shoyu. The only difference is that this is minus the chicken/duck chashu in the ramen version. This was really good, probably my favorite of this weekends food intake. The broth was a little richer and thicker than the ramen version, which was expected.

Tsukemen – Silverlake Ramen. Tokyo style, creamy pork and fish broth, bean sprouts, lime, green onion, seaweed, and egg. I really liked the broth and the pork chashu. It’s probably the largest cuts of pork I’ve ever had in a bowl of noodles. This is my favorite bowl at this shop.

The Tokusei Tsukemen from Taishoken. This has a rich dipping sauce made with pork, chicken, dried anchovy, and dried bonito. Thick noodles are topped with pork chashu, sous-vide Berkshire pork chashu, soft boiled egg, bamboo, seaweed, and green onion. This bowl is special for the use of two styles of pork. The traditional thick chashu that melts in your mouth and the sous-vide Berkshire pork. These compliment each other really well.
