The late Jonathan Gold, a renowned food critic for the Los Angeles Times, crowned Tsujita as “the king of tonkotsu ramen in Los Angeles” in 2017, cementing its place in the ramen hall of fame.

At Ramen & Tsukemen Tao, Sano applies his expertise to create unique Miso-style ramen, offering two distinct options: the robust red miso and a more subtle, yet equally captivating, white miso.

A past and potentially future highlight on their menu is the electrifying Spicy Miso Ramen. Pork Curry Ramen from Kotoya Ramen. Pork based broth with lots of curry flavor. Topped with pork chashu, corn, beansprouts, and wood ear mushrooms. This is a hearty bowl. I can’t wait till it’s gets cold here in LA. These types of bowls are my favorite bowls to crush with the weather dips below the average of 70 degrees.

All of the ingredients laid out. Pork Chashu, noodles, bamboo, corn, miso broth concentrate, green onion, and seasoned egg.

These instructions are pretty simple to follow.

This is the hatcho style miso broth concentrate. You’ll add the hot water to this and whisk well.

Add your hot water to the broth concentrate.

This is what the concentrate and hot water look like once you’ve whisked the broth.

The final product with spicy miso soup base, noodles, pork chashu, marinated egg, green onions, bamboo shoots, chili threads, and corns. Get your slurp on!

The creamy vegan miso is organic soy broth enriched with special whipped vegan miso. The toppings include mixed greens, radish, menma, green onions, corn, and bean sprouts.

The broth is creamy and has a hint of nuttiness to it.

The noodles are chewy and distinct from the hard and thin noodles used in their other bowls. This is a hearty bowl of ramen that will leave you satisfied.
