Nandomo White Ramen, served at Nandomo in the Rodeo39 Public Market and a sister shop of Hironori: Pork bone broth accompanied by pork chashu with a hint of BBQ flavor that ramen hunters will savor, green onions, bean sprouts, seaweed, soft-boiled egg, and a drop of spicy paste.

I believe they are using similar noodles as their sister shop Hiro Nori. They are a little soft for my preference, but to each his own. The chashu was delicious. It may remind you of a traditional bbq pork flavor.

This bowl is a little richer when compared to the white ramen this shop serves up. That’s accomplished with the use of squid ink and black garlic oil.

Based pork broth featuring flavorful fish dashi. Sliced pork chashu, scallion, wild ear mush room, soft boiled egg, seaweed. This was surprising good as the fish flavor was subtle and light.

Signature from Josui. This has a touch of fish flavor that’s only appropriate if you are into this flavor profile to begin with. If you are new to ramen you may not like this. If you start eating ramen regularly, you’ll probably acquire a taste for bitter fish flavor in your broth.

The signature ramen from Josui isn’t for everyone. The broth is finished off with a little fish stock. This a little more of an acquired taste. If you are just beginning your ramen experience, you may want to wait until your taste buds are a little evolved.

The stock is a mixture of pork and chicken. Topped with green onions, radish, bamboo, seaweed, and pork chashu.

Served with thin noodles.

At Ramen & Tsukemen Tao, Sano creates incredible Miso-style ramen. You can choose between a hearty red miso or a softer, but equally delicious, white miso broth.

The Abura Soba @ Josui is a great bowl of noodles that comes without broth. The chef provides a healthy serving of chopped up seaweed that is perfect when mixed with the special blend garlic oil sauce. An egg was added to this order.

The noodles are thin and served cold. Perfect for a hot day.

Josui is probably one of the shops that I’ve revisited many times. The quality and variety of ramen is why I’ve returned so much. I think you’ll find something for even the most sophisticated taste buds here.
